I followed Autum to Carrie's Dinner Challenge. Last night's dinner needed to be quick and easy to stay heated, as there was a lot of coming and going; orchestra concerts, late work, chocolate dates, and other important matters. (Wow, food can be tough to photograph well anyway, but it is nearly impossible to get a great shot of dinner -- at dinnertime! The light here is seriously lousy! Ah, well, it tasted great and the family ate it up.)
Black Bean and Spinach Burritos
(This is a "wing it and throw in what you've got" recipe. This batch was made with leftover porkchops, finely chopped/shredded, instead of the ground beef.)
1/2 - 3/4 # ground beef, browned
1 can black beans, rinsed and drained
about 10 oz. (give or take) fresh or frozen spinach
1 - 1 1/2 c. salsa
about 1 tsp cumin, 2 tsp chilli powder - more or less, to taste
salt & pepper
Warm it all together, put inside warmed tortillas with a nice pile of shredded cheese, and top with salsa and sour cream, if you please.

Guess who? It won't take you long to figure it out - I found you from the Jerusalem Adventure blog. I started to try and catch up - but you have written extensively! I thoroughly enjoyed what I read, though. I've only been at it for this month.
